2007 Sauvignon Blanc

The 2007 growing season was one of the region's best. We had a hot and dry summer with a warm autumn resulting in an excellent vintage. The grapes were hand picked at optimum maturity at 24 Brix. The fruit was destemmed and lightly crushed with brief skin contact before pressing. After 20 days of controlled fermentation the wine remained on lees for an extended period of time to enhance structure, richness and general mouthfeel. Following racking and filtering the wine was bottled on 28 September 2007 and the wine has developed exquisite subtlety and depth of character. Crisp with ripe citrus aromas and herbal-edged flavors of passion fruit and lemon blossom and a rich full bodied palate complete this classic estate grown Martinborough Sauvignon Blanc.
